RICHARD DRAPKIN – PARTNER
RICHARD DRAPKIN has been a driving force in Southern California dining for over two decades.
Drapkin began his career in the restaurant industry after moving to New York. There he worked at the venerable Café des Artists, Tavern on the Green, and Le Grenouille.
In 1982, Drapkin moved to Los Angeles and became director of guest services for the L’Ermitage Hotel Group before opening Café Jacoulet in Pasadena in 1983 and the the critically acclaimed Les Anges in Santa Monica shortly thereafter.
By 1990, Drapkin was a consultant for myriad areas of the food service industry. His clients included Wolfgang Puck Food Company, Pasqua Coffee, Koo Koo Roo/Arrosto Coffee Company, La Seranata, Baja Cantina, Michael & Robert’s Melange, and Double Rainbow Ice Cream.
In 1999 in an effort to expand his knowledge Drapkin graduated law school magna cum laude and passed the California bar.
Also in 1999, he formed a strategic partnership with restaurateurs Bruce Marder , Marvin Zeidler and famed wine-store owner Steve Wallace. Together they own the Brentwood Restaurant and Lounge as well as Cafe Brentwood which opened in 2013. They are partners in the management company Foodco West that operates the two Brentwood Restaurants as well as Cora’s, Capo and Marvin.
In 2003 Drapkin and restaurateur Amy Knoll and Chef Neal Fraser opened Grace Restaurant and then in 2006 opened BLD restaurant. Both of these restaurants were lauded internationally for their cutting edge cuisine, ambience and service. BLD in 2014 opened its quick service outlet at LAX Terminal 7.
In 2010 Drapkin joined restaurant partner Steve Wallace to become Director of Business Affairs at Wally’s Wines & Spirits. In 2013 he spearheaded the sale of Wally’s to the Marciano Family, the owners of the Guess Company.
Since 2012 Richard has partnered with Food Network Star Duff “Ace of Cakes” Goldman,to open Duff’s Cakemix, the first of its kind DIY cake bakery.
BRUCE MARDER – PARTNER
BRUCE MARDER has been a restaurateur since 1972. He has opened and consulted on 13 restaurants in his over forty years of experience. His new concepts of cuisine and award winning innovations as a chef have garnered rave reviews from Southern California’s restaurant writers: `Overall, Capo has got everything right: the ambience, the service, the wine list. Everything…´ S. Irene Virbila, Los Angeles Times Magazine. In recent conversations with Merrill Schindler, noted restaurant writer and the head of the Zagat Guide, Mr. Schindler has indicated that in the near future, Capo will be the Number 1 restaurant in Los Angeles.
Bruce Marder’s ability to open cutting edge restaurants in Los Angeles has earned him the respect of restaurant royalty. His trend setting West Beach Café brought art and food to Venice in the 70′s and defined California Cuisine for nearly 2 decades. In Marder’s desire to move upward in fine dining, he sold West Beach Café and opened Capo. Rebecca’s Restaurant brought art and architecture into dining and became world famous, being published in most major magazines in the United States, Europe and Asia. He consulted on the opening of DC-3 and attracted lines of patrons nightly. DC-3 won Interior Magazine′s ′Restaurant Design of the Year Award′. Moving forward into the new millennium, Bruce Marder has put his expertise toward a modern day concept that will define restaurant dining for many years to come.
Bruce Marder is currently operating 5 restaurants and a bakery on the Westside: Capo, Brentwood Restaurant & Lounge, and Cora’s Coffee Shoppe. The newest concepts are: Red Rooster Bakery in Santa Monica, Café Brentwood next to Brentwood Restaurant and Marvin in Beverly Hills adjacent.
STEVE WALLACE – PARTNER
STEVE WALLACE is the founder of Wally’s, one of the finest retail wine, spirit, and food stores in the country, as well as a partner in several Los Angeles restaurants: world famous Capo in Santa Monica, Cora’s Coffee Shoppe, Brentwood Restaurant and Lounge and Cafe Brentwood.
Mr Wallace has acted as a professional judge in numerous wine competitions. He is the recipient of the prestigious Leaders Award and Retailer of the Year Award from Market Watch Magazine and is a member of Le Grand Conseil, L’Academie du Vin Bordeaux, L’Ordre des Coteaux de Champagne and Leccio d’Oro. Mr. Wallace sits on numerous boards including the Vista Del Mar Child and Family Services.
MARVIN ZEIDLER – PARTNER
MARVIN ZEIDLER was born in Los Angles and received his B.B.A degree from Woodbury College. He is co-managing partner of Capo, and Cora’s Coffee Shop, Co-owner of The Red Rooster Bakery in Santa Monica, and Partner in Brentwood Restaurant and Cafe Brentwood in West Los Angeles.
He has been a wine judge at The Los Angeles International Wine Competition for the past 25 years and serves on their wine steering committee. He also judges wine at The National Orange Show, and the New World Wine Competition.
M. Zeidler was the Founder and General Partner of Citrus Restaurant in Los Angeles. He travels two to three months every year in Italy as a wine and food consultant.
KYLE LAU – WINE DIRECTOR
KYLE KALANI LAU, born and raised in Hawaii, got his first taste of the service industry bussing tables at the family restaurant at just ten years old. From there he worked his way up to train with some of the top professionals on the islands at the Halekulani Hotel in their five diamond resort before setting his sights on Las Vegas. On the strip, he had the privilege of working under the mentorship of some of the industry’s best, including the Michael Mina Group and the highly acclaimed chef, Pierre Gagnier.
Since 2014 he has found himself here, at Capo Restaurant with Chef Bruce Marder, where he has found the perfect combination of the warmth and hospitality of Hawaii and the flair and style of Vegas. As Wine Director and Maitre D’, he strives to bring the best offerings from around the world to a place that feels as welcoming as your own home.
DIANE BACCARO – EVENT COORDINATOR
DIANE BACCARO spent 10 years working in customer service and hospitality before finding Capo Restaurant. Now, with nearly a decade of experience working with Chef Bruce Marder, she brings her deep appreciation of his food, as well as her expertise as a certified sommelier, to craft one of a kind events across his restaurant group: Capo, Brentwood, The Rooster, Marvin, and Cora’s Coffee Shoppe. From small intimate gatherings in your home, to wedding receptions, birthday parties, corporate dinners, and other celebrations hosted at one of our restaurants, she settles for nothing less than exceeding your expectations.
